Tea bread with black bananas and yogurt. Add currants for extra deliciousness!
Ingredients
1 lb very ripe (black) bananas, about 5 medium, peeled
1 2/3 cups sugar
4 1/2 teaspoons baking soda
1/2 teaspoon salt
3 1/2 cups whole wheat flour
8 egg whites, beaten (or egg substitute for 4 eggs)
2/3 cup nonfat plain yogurt
1/2 cup skim milk
Instructions
1. Mash the bananas.
2. Mix in sugar, salt, and baking soda.
3. Add flour and egg whites alternately, mixing after each addition.
4. Mix in milk and yogurt.
5. Pour into two nonstick 8x4 inch loaf pans, about 2/3 full.
6. Let stand 25 minutes.
7. Bake in very slow oven (250°F) for 2 hours.
Note: Muffins take about 1 hour 10 minutes.
