Creamy Scalloped Potatoes

Rich and creamy scalloped potatoes made lighter with fat-free ingredients.

Ingredients

2 lbs potatoes, peeled and sliced 1/8" thick 1 medium onion, thinly sliced 2 tablespoons flour 1 1/2 cups fat-free evaporated milk 1/2 cup vegetable broth 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon nutmeg Paprika for garnish

Instructions

1. Preheat oven to 350°F. 2. Spray 2-quart baking dish with cooking spray. 3. Layer half the potatoes and half the onion in dish. 4. Whisk flour into evaporated milk and broth until smooth. 5. Add salt, pepper, and nutmeg. 6. Pour half the sauce over potatoes. 7. Add remaining potatoes, onion, and sauce. 8. Sprinkle with paprika. 9. Cover and bake 45 minutes. 10. Uncover and bake 30 more minutes until golden and bubbly.
