Refreshing Japanese cucumber salad with ginger-vinegar dressing. Perfect summer side dish!
Ingredients
2 large cucumbers, peeled, halved, seeded, and sliced thin
2 slices ginger, chopped fine
1/3 cup white vinegar
4 teaspoons sugar (or 2 packets artificial sweetener)
Instructions
1. Mix ginger, vinegar, and sugar well until sugar dissolves.
2. Slice cucumbers very thin (food processor works well with thin slicing blade).
3. Pour dressing over cucumbers.
4. Cover and marinate overnight in refrigerator.
5. Serve chilled.
