Quick Japanese pickled daikon radish greens. A perfect condiment for rice!
Ingredients
Fresh daikon radish with leaves attached
1/2 teaspoon salt per 2 cups chopped greens
Instructions
1. Cut leaves off fresh daikon (must be very fresh!).
2. Trim off outer parts of biggest leaves.
3. Mince the ribs and green parts very small. Optional: add some minced root.
4. Place in large bowl and sprinkle with salt. Mix well with hands.
5. Let stand at least 10 minutes. Daikon will release water.
6. Drain in fine colander if available.
7. Squeeze out as much water as possible, one handful at a time.
8. Store in refrigerator for up to a week.
9. Serve with hot rice!
