Simple roasted potatoes with plenty of garlic and fresh herbs.
Ingredients
2 lbs small red or Yukon gold potatoes, quartered
6 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable broth
Instructions
1. Preheat oven to 400°F.
2. Toss potatoes with all ingredients in large bowl.
3. Spread in single layer on baking sheet sprayed with cooking spray.
4. Roast 30-40 minutes, stirring occasionally, until golden and tender.
5. Adjust seasoning to taste before serving.
