Japanese noodles and vegetables in a flavorful mushroom broth. Hearty and satisfying!
Ingredients
8 dried shiitake mushrooms
2 cups hot water
3 1/2 cups konbu dashi
5 tablespoons tamari soy sauce
1/2 cup sake
1/2 large carrot, thinly sliced
8 scallions, cut in 2 1/2-inch pieces
2 cups sliced Chinese cabbage
1 pound soba noodles
Instructions
1. Soak shiitake in hot water 20-30 minutes. Reserve liquid. Trim stems, slice caps.
2. Combine shiitake liquid with konbu dashi to make 5 cups total.
3. Add soy sauce, sake, and shiitake. Simmer.
4. Briefly cook each vegetable in broth, one at a time, until just barely cooked. Remove and set aside.
5. Continue simmering broth while cooking soba in separate pot.
6. Divide cooked, drained soba among 4 big bowls.
7. Arrange vegetables prettily on top.
8. Pour generous cup of very hot broth over each bowl.
9. Garnish with chopped scallions and hot pepper flakes if desired.
