Great Fat-Free Baguettes

Crusty French-style baguettes made without fat. Put water pan in oven for extra crispy crust!
Ingredients
2 packages quick-rise dry yeast
1/2 tablespoon sugar
1/3 cup warm water
1 teaspoon salt (optional)
1 cup water
3 cups whole wheat flour
1 cup unbleached white flour
Cornmeal for dusting
Instructions
1. Dissolve yeast and sugar in 1/3 cup warm water. Set aside.
2. Mix flours and salt in a bowl. Add yeast mixture, then 1 cup water.
3. Mix dough until smooth, about 5 minutes.
4. Cover with damp cloth, let rise 1 hour.
5. Punch down, divide into 2 or 4 loaves.
6. Slice tops 2 inches across, 1/4 inch deep.
7. Dust with cornmeal.
8. Place in cold oven set to 350°F for 1 hour.
For crustier bread: Place pan of water on bottom of oven for first 30 minutes. Optionally brush loaves with egg white mixed with 1/2 cup water after 50 minutes.
