Chilled Japanese noodles with spicy dipping sauce. Refreshing summer meal!
Ingredients
Dipping Sauce:
1 cup shiitake dashi
2 cups konbu dashi
2/3 cup tamari soy sauce
1 cup sake
1/4 cup mirin
1 teaspoon grated ginger
Condiments:
1/2 cup grated daikon
1/2 cup chopped scallions
1 tablespoon wasabi powder
Vegetables:
1/2 red bell pepper, sliced thin
1/2 cucumber, cut into matchsticks
2 cups sliced Chinese cabbage
16 snow peas
1 sheet nori, toasted and crumbled
1 pound somen noodles
Instructions
1. Combine dipping sauce ingredients and simmer uncovered 30 minutes. Cool to room temperature.
2. Mix daikon and scallions. Mix wasabi powder with 2 tablespoons cold water. Cover.
3. Prepare vegetables. Blanch cabbage 2 minutes and snow peas 1 minute. Cool.
4. Toast nori over flame until stiff, crumble.
5. Boil somen 3 minutes. Place in bowl of cold water with ice until completely cooled. Drain.
6. Mound cold somen on platter. Arrange vegetables around it. Sprinkle nori on top.
7. Serve with individual cups of dipping sauce, daikon, scallions, and wasabi.
