Traditional slow-cooked apple butter that freezes beautifully. Worth the 12-24 hour cooking time!
Ingredients
1 1/2 bushels apples (Rome, McIntosh, or combination)
Apple cider
Per quart of applesauce:
2 cups sugar
1 tablespoon cinnamon
Pumpkin pie spice to taste
1 cup sake (for finishing)
Instructions
1. Wash apples and cut in half. Place in large pots with enough cider to cover bottom.
2. Cook on low heat 12-24 hours until thoroughly cooked and skins are translucent.
3. Run through a foley mill to remove seeds and skins.
4. For each quart of applesauce, add 2 cups sugar, 2 tablespoons cinnamon, 1 tablespoon pumpkin pie spice.
5. Simmer on low another 12-24 hours until butter is DARK. Don't let it scorch!
6. Add 1 cup sake per 3 quarts. Turn heat to medium-high, cover loosely, boil down 30-60 minutes until thick.
7. Can in sterilized jars.
Makes about 15 quarts.
