Konbu Dashi

Basic Japanese kelp stock. The foundation of Japanese cooking!

Ingredients

1/2 ounce dried konbu (kelp) 8 cups water

Instructions

1. Bring konbu and water to a boil. 2. Turn heat down, cover, and simmer for 20 minutes. 3. Pour through strainer to remove konbu. 4. The remaining liquid is the dashi. 5. If not using right away, let cool and refrigerate. Note: Konbu dashi will keep for 4-5 days refrigerated.
