Mormon Diet Apple Bread

Excellent cinnamon apple bread with only 2% calories from fat. Makes 2 loaves!

Ingredients

2 3/4 cups whole wheat flour 2 teaspoons cinnamon 1 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt (optional) 1/4 cup applesauce 1/4 cup corn syrup 1 1/2 cups sugar 4 egg whites or substitute 1/2 teaspoon vanilla 3 cups apples, peeled, cored, and coarsely chopped

Instructions

1. In large bowl, combine flour, cinnamon, baking soda, baking powder, and salt. 2. In medium bowl, combine applesauce, corn syrup, sugar, egg whites, vanilla, and apples. 3. Stir wet into dry mixture. 4. Divide between two 8x4 inch pans sprayed with nonstick spray. 5. Bake at 350°F for 40-45 minutes or until bread tests done. 6. Cool 10 minutes on wire racks before removing from pan.
