Dr. Dean Ornish's perfect cornbread that kids love! Light and springs back when touched.
Ingredients
1 cup unbleached flour (or half whole wheat pastry flour)
1 cup yellow cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup soy milk
1/4 cup unsweetened applesauce
1/4 cup Wonderslim liquid egg replacer
Instructions
1. Preheat oven to 425°F.
2. Spray 8-inch nonstick pan lightly with cooking spray.
3. Stir together flour, cornmeal, sugar, baking powder, and salt.
4. Whisk together milk, applesauce, and egg replacer in large bowl.
5. Put prepared pan in oven to preheat briefly (don't overheat - spray burns easily).
6. Add dry ingredients to liquid. Stir lightly just to blend - do not overmix.
7. Pour into preheated pan.
8. Bake until top is lightly browned and springs back when touched, about 20 minutes.
