Prune Bran Apple Muffins

Moist low-fat muffins using prune puree as fat replacement. Only 5% calories from fat!

Ingredients

For Prune Puree: 1 1/3 cups pitted prunes (8 oz) 6 tablespoons water For Muffins: 1 cup buttermilk 1 cup bran cereal shreds 1 teaspoon baking soda 1/2 cup packed brown sugar 1/2 cup prune puree 2 large egg whites 1 tablespoon molasses 1 cup flour 1 cup peeled and grated apple 1/4 teaspoon salt

Instructions

For Prune Puree: 1. Combine prunes and water in food processor. Pulse until finely chopped. Makes 1 cup. For Muffins: 1. Preheat oven to 375°F. Spray 12 muffin cups with cooking spray. 2. Combine buttermilk, bran, and baking soda. Set aside. 3. In mixer bowl, cream sugar and prune puree. Beat in egg whites and molasses. 4. Stir in buttermilk mixture, flour, apple, and salt until thoroughly blended. 5. Spoon into muffin cups. 6. Bake 20 minutes until pick comes out clean. 7. Cool in pan 15 minutes, then turn onto rack.
