Quick Couscous for One

Fast single-serving couscous with whatever vegetables you have on hand!

Ingredients

1 1/4 cups liquid (water with broth powder, canned soup, V8, or spicy V8) 3/4 cup couscous Assorted vegetables (zucchini, onions, peppers, string beans) Your choice of flavoring (spices, spaghetti sauce, salsa, hot sauce)

Instructions

1. Shred or chop vegetables. Thaw if frozen, wash if fresh. 2. Add vegetables to liquid along with your chosen flavoring. 3. Bring to a boil. 4. Stir in couscous. 5. Remove from heat and let sit 5-10 minutes. 6. Fluff and enjoy! Note: Great way to use up vegetables sitting in your fridge!
