Easy weeknight tacos loaded with seasoned vegetables and beans.
Ingredients
8 taco shells or soft tortillas
1 can black beans, drained and rinsed
1 cup corn kernels
1 bell pepper, diced
1 onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt to taste
Toppings:
Shredded lettuce
Diced tomatoes
Fat-free sour cream
Salsa
Fresh cilantro
Instructions
1. Sauté onion and pepper in small amount of water until soft.
2. Add garlic and cook 1 minute.
3. Add beans, corn, and spices.
4. Heat through.
5. Warm taco shells or tortillas.
6. Fill with bean mixture.
7. Add favorite toppings.
