Quick quesadillas using fat-free refried beans and corn. Ready in minutes!
Ingredients
1/2 cup frozen corn, thawed
2 tablespoons sliced green onion
1/4 teaspoon ground cumin
1 (16 oz) can fat-free refried beans
8 (8-inch) fat-free flour tortillas
3/4 cup shredded fat-free cheese
1/2 cup nonfat sour cream
Cilantro and jalapeños for garnish (optional)
Instructions
1. Combine corn, green onion, cumin, and refried beans in bowl.
2. Spread about 1/2 cup bean mixture over 4 tortillas.
3. Top each with 3 tablespoons cheese and remaining tortillas.
4. Coat nonstick skillet with cooking spray.
5. Heat over medium-high heat.
6. Cook each quesadilla 3 minutes per side until golden.
7. Cut each into 4 wedges.
8. Serve with sour cream, cilantro, and jalapeños.
