Crispy pan-fried corn fritters. Light and delicious!
Ingredients
1 cup + 2 teaspoons all-purpose flour
1/4 teaspoon baking powder
1 egg substitute (equivalent to 1 egg)
1/2 cup thawed frozen corn
1/2 cup cream-style corn
2 tablespoons finely chopped red bell pepper
Red bell pepper rings for garnish
Instructions
1. Mix flour, baking powder, egg substitute, both types of corn, and bell pepper.
2. Spray skillet with non-stick cooking spray.
3. Drop batter by tablespoons, forming 4 fritters at a time.
4. Cook over medium heat until bottoms are lightly browned, 2-3 minutes.
5. Flip fritters and cook 2 minutes longer.
6. Garnish with red bell pepper rings.
