Seven-Vegetable Couscous

Morocco's national dish with seven vegetables (a lucky number!). Aromatic and colorful!

Ingredients

2 quartered onions 4 quartered tomatoes 1 finely sliced red chili 1 bunch fresh coriander (cilantro) 1 bunch fresh flat-leaf parsley 2 cinnamon sticks 2 teaspoons salt 1 teaspoon each: black pepper, ginger, turmeric 1/4 teaspoon saffron threads 8 small halved carrots 4 medium quartered turnips 450g (1 lb) cubed butternut squash 4 medium halved zucchini 400g can chickpeas, drained 75g (3 oz) raisins (optional) 500g couscous

Instructions

1. In large pan, place onions, tomatoes, chili, half the cilantro and parsley, add spices and about 1/2 pint water. 2. Cover and simmer 45 minutes, checking liquid and adding more if needed. 3. Add carrots and turnips, cover and simmer 15 minutes. 4. Add squash, zucchini, chickpeas, and raisins. Simmer 15 more minutes. 5. If too runny, cook uncovered to reduce. 6. Prepare couscous according to package. 7. Serve vegetables over couscous.
