Simple Dal (Lentil Curry)

A basic everyday dal that's comforting and nutritious. Perfect with rice or roti.
Ingredients
1 cup red or yellow lentils
3 cups water
1/2 teaspoon turmeric
1 onion, diced
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon cumin seeds
1/2 teaspoon garam masala
1 tomato, diced
Salt to taste
Fresh cilantro for garnish
Instructions
1. Rinse lentils until water runs clear.
2. Bring lentils, water, and turmeric to boil.
3. Reduce heat and simmer until lentils are soft, about 20-25 minutes.
4. In separate pan, dry-toast cumin seeds until fragrant.
5. Add onion and sauté in small amount of water until golden.
6. Add garlic and ginger, cook 1 minute.
7. Add tomato and garam masala, cook 3-4 minutes.
8. Stir spice mixture into lentils.
9. Add salt to taste.
10. Garnish with cilantro and serve with rice.
