Easy vegan cornbread using egg replacer and applesauce. Moist and delicious!
Ingredients
1 cup cornmeal
1 cup flour
4 teaspoons baking powder
1/4 cup sugar (add more for sweeter bread)
1 teaspoon salt
1 tablespoon Ener-G egg replacer
1 cup fat-free soy milk
Almost 1/2 cup unsweetened applesauce
Instructions
1. Mix all ingredients together until just combined.
2. Pour into a NON-preheated 450°F oven.
3. Bake for 20-25 minutes.
4. For moister center, bake 20 minutes. For firmer texture, bake 25 minutes.
