Easy vegan cornbread with soymilk and vinegar for a buttermilk-like tang.
Ingredients
1 1/2 cups soy milk
1 1/2 tablespoons vinegar
1 cup cornmeal
1 cup whole wheat or white flour
2 tablespoons sugar or equivalent sweetener
3/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
Instructions
1. Mix soy milk and vinegar together. Let sit 5 minutes.
2. Mix dry ingredients separately.
3. Combine wet and dry ingredients.
4. Pour into sprayed pan.
5. Bake at 425°F for 25-30 minutes.
6. Test with toothpick - when it comes out clean, they're ready.
