A beloved Surinamese comfort dish - B.B. with R.! Warming and flavorful.
Ingredients
1 cup cooked brown beans with some cooking water
2 onions, cut
2 large tomatoes, cut
1 fresh twig of celery leaves
1 whole fresh hot pepper
1 vegetable bouillon cube
Nutmeg to taste
Black pepper to taste
Cooked brown rice for serving
Instructions
1. Simmer onions in a little water for a few minutes.
2. Add tomatoes and bouillon cube. Simmer until thickened, about 5 minutes.
3. Season with black pepper.
4. Add beans, celery leaves, and whole hot pepper.
5. Add enough bean cooking water for sauce consistency.
6. Simmer until liquid is thickened, about 10 more minutes.
7. Season with nutmeg (and more pepper if desired).
8. Serve rice covered with the beans.
9. Finely cut hot pepper for those who want extra heat!
10. Serve with cucumber salad.
