Swedish Fruit Soup

Traditional Swedish fruit soup with dried fruits and tapioca. Comforting and nostalgic!

Ingredients

Prunes (generous amount) Dried apricots (generous amount) Apples (fresh, sliced) 1-2 tablespoons tapioca 1-2 tablespoons sugar Any other dried fruits you like 2 cans pie cherries Lite Cool Whip, fat-free vanilla ice cream, or yogurt for topping

Instructions

1. Combine prunes, dried apricots, apples, tapioca, and sugar in pot. 2. Add water to cover. 3. Stew until all fruits are tender. 4. When done, stir in pie cherries. 5. Serve warm or chilled with topping of choice. Note: Amounts are flexible - adjust to your taste!
