Swiss-Style Basic Bread

Traditional Swiss bread with generous salt. The secret is vigorous kneading for 20 minutes!
Ingredients
1 kg white flour (2.2 lbs, about 8 cups)
25 g fresh yeast (or 1/3 oz dry yeast)
20 g salt (2/3 oz, about 1 tablespoon)
600 ml water (2 2/5 cups)
Instructions
1. Put flour into large bowl.
2. Stir yeast with warm (not hot!) water in small bowl.
3. Add salt.
4. Mix with flour and KNEAD! For 2.2 lbs flour, knead vigorously for 20 minutes. You should break into a sweat!
5. Fold dough to trap air. Cut to check for air bubbles.
6. Let rise until size doubles.
7. Make two loaves, place on cookie sheet. Let rise briefly.
8. Bake at 400°F (middle heat) in preheated oven for 40-70 minutes.
Troubleshooting: Heavy bread is usually caused by dough that's too dry. Keep it slightly sticky when making loaves.
