A quick and easy stir-fry with tofu and vegetables in a homemade teriyaki sauce.
Ingredients
1 block (14 oz) extra-firm tofu, pressed and cubed
2 cups mixed stir-fry vegetables (broccoli, snap peas, carrots)
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons maple syrup
1 teaspoon cornstarch
2 cloves garlic, minced
1/2 teaspoon ground ginger
1/4 cup vegetable broth for cooking
Cooked rice for serving
Instructions
1. Press tofu and cut into 1-inch cubes.
2. Mix soy sauce, vinegar, maple syrup, cornstarch, garlic, and ginger for sauce.
3. Heat broth in large skillet over medium-high heat.
4. Add tofu, cook until browned, about 8 minutes. Remove.
5. Add vegetables, cook until crisp-tender, 4-5 minutes.
6. Return tofu to pan, pour sauce over.
7. Cook, stirring, until sauce thickens, about 2 minutes.
8. Serve immediately over rice.
