Three Bean Burritos

Hearty burritos with pinto, black, and garbanzo beans mixed with roasted vegetables.

Ingredients

1 can pinto beans 1 can black beans 1 can garbanzo beans 2+ cloves garlic, minced Salt-free seasoning blend 1 cup roasted vegetables (peppers, zucchini, squash) Cayenne pepper to taste Whole wheat tortillas Toppings: Lettuce Tomato Fat-free cheese Fat-free yogurt Salsa

Instructions

1. Combine all beans in saucepan with about 1 cup water. 2. Cook for 1 hour until soft. 3. Add cut-up roasted vegetables. 4. Use mixer to blend until like refried beans. 5. Add spices and simmer 20 minutes. 6. Serve in tortillas with toppings. Tip: Smash garbanzos first before adding for smoother texture.
