A plant-based alternative to scrambled eggs with turmeric for color and nutritional yeast for flavor.
Ingredients
1 block (14 oz) firm tofu
1/4 cup nutritional yeast
1/2 teaspoon turmeric
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black salt (kala namak) for eggy flavor, or regular salt
2 tablespoons low-sodium soy sauce or tamari
1/4 cup vegetable broth
1/2 cup vegetables (spinach, mushrooms, peppers, onions)
Instructions
1. Drain tofu but don't press. Crumble into a bowl with hands.
2. Heat broth in nonstick skillet over medium heat.
3. Add any vegetables and cook until soft, about 3-4 minutes.
4. Add crumbled tofu to pan.
5. Sprinkle with turmeric, garlic powder, onion powder, and black salt.
6. Add nutritional yeast and soy sauce.
7. Cook, stirring occasionally, for 5-7 minutes until heated through.
8. Serve immediately with toast or in a breakfast burrito.
