Creamy mushroom stroganoff with veggie burgers or TVP chunks. Includes mock sour cream recipe!
Ingredients
Saute liquid or cooking spray
1 large onion, chopped
6 cups mushrooms, sliced
1 teaspoon paprika
1/4 cup unbleached flour
6 veggie burgers, cubed (or TVP chunks rehydrated in strong stock)
1/2 cup cooking sherry
1/2 cup white cooking wine
Veggie stock as needed
6 tablespoons mock sour cream
1/2 teaspoon mild mustard
Mock Sour Cream:
10.5 oz silken tofu (1% Mori-Nu)
1 tablespoon fresh lemon juice
1 tablespoon brown rice vinegar
1 teaspoon brown rice syrup
1/2 teaspoon apple cider vinegar
1/2 teaspoon sea salt
Instructions
For Mock Sour Cream:
1. Blend all ingredients in food processor until completely smooth.
2. Add pinch of dill and thyme for stroganoff use.
For Stroganoff:
1. Sauté mushrooms and paprika in sprayed pan or sauté liquid.
2. Add flour and cubed veggie burgers, stir well and brown 2 minutes.
3. Pour in wine and sherry, simmer VERY gently 10-15 minutes. Stir often, add stock if dry.
4. Remove from heat. Add sour cream and mustard, heat through but do not boil.
5. Serve immediately over noodles.
