A mild, creamy curry with mixed vegetables. Great for those new to Indian food.
Ingredients
4 cups mixed vegetables (potatoes, cauliflower, carrots, peas)
1 onion, diced
2 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon coriander
1 cup fat-free plain yogurt or coconut milk
1/2 cup vegetable broth
Salt to taste
Fresh cilantro for garnish
Instructions
1. Parboil harder vegetables (potatoes, carrots, cauliflower) until just tender.
2. Sauté onion in small amount of water until golden.
3. Add garlic and ginger, cook 1 minute.
4. Add all spices and cook 1 minute.
5. Add parboiled vegetables and peas.
6. Stir in yogurt and broth.
7. Simmer 10-15 minutes until vegetables are tender and sauce thickens.
8. Salt to taste and garnish with cilantro.
9. Serve with basmati rice or naan.
